Baking – Vegan Lemon Cake

What, a baking post, who is this girl?

So one of my favourite things to do is baking, now i’m no Martha Stuart but I find it so therapeutic and I mean who doesn’t love eating delicious treats? If you read my Dabble in the Vegan World   post a while ago then you’ll know my boyfriend Martin decided to go vegan at the beginning of the year so making sweet things for him became kinda hard as I was clueless about vegan baking and food, it’s been a journey let me tell you!

So one of the things that i’ve actually became really good at baking (not to toot my own horn or anything) is Vegan Lemon Cake, guys this is actually so delicious and really really easy to bake so I wanted to just share with you the recipe and how you can make it also … if you fancy it.


100ml Vegetable Oil

275g Self-Raising Flour

200g Caster Sugar

1tsp Baking Powder

1 Lemon zested & 1/2 lemon squeezed

Icing – 75g Icing Sugar & 1/2 lemon


So this is so easy first you just mix the flour, sugar, baking powder and lemon zest into a bowl.

Add the vegetable oil, 170ml cold water and the 1/2 lemon squeezed into the mixture and combine together until it’s smooth.

Now you want to line a baking tin with grease paper, I usually use a medium square tin. Add a little oil to the parchment and smooth it around the tin to avoid sticking.

Pour the mixture into the tin and place it in the oven heated at 200C/180C fan/ gas 6. Leave it in the oven for 30 minutes until the top is golden.

Once out the oven, leave the tin to cool down a little before transferring onto a plate and leave to cool completely.

Once the cake is cooled prepare the icing by squeezing half a lemon into the icing sugar, for my preference i usually do two squeezes of the lemon and add cold water for the rest of the icing just to avoid a heavy bitter taste but it’s entirely up to you how much of the 1/2 lemon juice you want to add.

Finally you can ice the cake however you like, I tend to just scoop the icing on a spoon and let it drip over the cake moving my hand up and down, across and diagonal.

Once the icing has settled cut your cake into squares and enjoy!!
